I have always tried to cut calories without cutting flavor from recipes and this is one of my favorites! You can dress it up for elegance or serve it as is for simplicity, I prefer the former who doesn’t need a little “elegance” in their lives 🙂
Individual Turkey Meatloaves with Cheese Mashed Potatoes and Veggies
- Preheat oven to 375 degrees.
- Take a medium/large onion and dice. Add about a tablespoon of olive oil to a pan over medium heat and add your onions. Cook until translucent, about 5 minutes and put aside to cool.
- In the meantime combine: a pound to 2 pounds of ground turkey, an egg, parmesan cheese (about 1/4 cup), a 1/4 cup of milk, a dash or two of cinnamon and some salt and pepper to taste.
- After the onions have cooled use your best kitchen tools, your hands, and mix the onions into the meat mixture, combining well. Use a 1 cup measuring cup sprayed with no stick spray and form your meatloafs.
- Mix together this oh so simple sauce for your meatloafs to keep them moist and add that little sumpin sumpin!
- Add the sauce liberally to your individual meatloafs and put those babies in the oven for exactly 40 minutes!
- In the meantime there are two very important steps! Please see below pics!
- When your potatoes have boiled for about 30-40 minutes, drain them and put them back in the pan. Add to your desired consistency: milk, cheddar cheese, sour cream, butter and salt and pepper to taste! I like to use an electric mixer to blend but yet leave a little texture to the potatoes, do as you wish.
- Take those sweet babies out of the oven!
- As always plate and serve with your favorite veggies. I love Birdseye frozen veggies as they are always fresh (oxymoron). Remember we eat with our eyes first make it pretty 🙂 And Enjoy!!!
